It began with around 15 pounds of honey bought from bj's for 2 dollars a pound. Not a bad price if I do say so myself. Then one packet of lavlin EC-1118 champagne yeast.
First everything was cleaned using some cleaner mark got at mayer's cider mill and then we began mixing the honey with the some water and heating it to a point above 160 degrees F but below boiling for several minutes in a process called flash pasteurization. all the weird bee parts and scum get skimmed off of the surface that I may remind you, you eat that in raw honey. :) Then we put all that in the primary fermenter along with a handful of raisins, a teaspoon of whole cloves, lemon zest, lemon juice, and yeast nutrient. The raisins are nutrients for the yeast and the cloves are just flavoring. The lemon juice makes the must more acid as yeast likes a more acid than base environment.
We started the yeast in a bowl with some water and sugar in order to get the colony going before it went into the must (honey water mixture).
Constantly checking the temperature was mandatory because if it goes above 95 degrees it will kill the yeast. The must had to spend some time inside of the fridge in order to cool it down a wee bit faster. After half of snatch the must was cool enough to add the yeast cover the primary fermenter with a cloth and the top and let er rip.
It'll take around 4-5 days of time for most of the fermentation to be done and then we are going to rack it into another carboy leaving the raisins and seasoning behind. it'll stay in there for a while then move to another one and then be bottled. I believe it is all falling into place. |

I've taken out the prices to add to the mystique to say the least it is not cheap. Give or take around 230 dollars with shipping but this will be all that Mark and I will need to begin the venture.
2 five gallon glass carboys with 6 gallon primary fermenter will allow for great quantities to be made. Around five gallon batches which equals around 27 wine bottles or 54 12 oz. beer bottles.
around 3 pounds of honey per gallon will be good enough for the yeast to eat quite a bit of it. the type of champagne yeast I am using can take the must (honey/water mixture) to about 15-17% before dying off of it's own byproduct.
Lemon juice to offset the alkaline nature of honey and black tea to add the necessary tannins. yeast starter and energizer to keep it going past the 10% 12% points where yeast lives tend to get a little bit on the edge.
4-5 days in the primary fermenter first racking 3-4 weeks in the secondary fermenter second racking 2-3 weeks in a third fermenter third racking into bottles cap the bottles store bottles for as long as possible (oxygen absorbing caps will keep the mixture from turning into vinegar because of the acetate bacteria)
Mead improves with age and though it is "done" fermenting at around the 2 week point it is necessary to allow the flavor to blend together and mellow with age.
I will begin with neither a dry nor a sweet mead but hopefully somewhere inbetween. It will be necessary to closely monitor the gravity of the solution. The yeast will convert about half of the weight of the sugars into alcohol. It would be good to have some sugar left over after the 15-17% mark to offset the alcohol flavors and overcome whatever off flavors there might be. The equipment list is not set in stone and will probably change :).
As always cleanliness is mandatory the disinfecting of all of the bottles and equipment before use is absolutely critical to the quality of the finished product. |

I'm home for thanksgiving. It is good.
I've decided that when I am home I should not be vegetarian. atleast with chicken because my mother simply does not cook anything that doesn't have meat in it and I don't believe it's my place to be such a thorn in her side. When I am by myself or at school then I have direct control over what's put on the table. But when it's a choice between eating a delicious home prepared meal or eating a pb&j and hurting my mom's feelings, sacrifices must be made.
This whole no video games thing worked really well until I got home... and was bored.
My house is a powder keg, and me thinks the match get's closer everytime I come home.
I have a lot of work to do for school. But I'm really calm and unconcerned about it. Even the past days when I've had essays to do the night before I'm for the most part (except when I'm running to class late with a paper I still have to print out at the library) have been pretty non-chalant about it. What's more is that I have no good reason for it. oh well. So it goes.
People at geneseo are pretty awesome. It's very difficult for me to imagine not being around them after this all ends. But, so it goes.
It's funny how life is so utterly complicated in one perspective, and then so ridiculously simple in the next. but whatever :)
I'm tired and rambling...

| | Arcade Fire - Wake Up | ] | there have been a few interesting things going on in my life these days.
I went to ithaca last weekend to see an arcade fire show which was freaking sweet. Even getting lost wasn't so bad. I slept on the floor in a three person dorm room which was excessively uncomfortable but in the end added to the experience of the trip... i guess :). My hips still hurt. Next weekend I'm going down to see my brother play a concert with his girlfriend with almost my entire family. it should be an excellent trip. I have a lot of work to do inbetween then and now. But I'm not really worried :).
I've become a vegetarian. It was almost on a whim that I started doing it. Joe came in and asked if I wanted to go vegetarian with him and I said yes :). I've been wanting to do it for quite some time for various reasons so I'm glad that I took that initial step and actually started :). I'm not finding it terribly difficult except for soups. Because chicken broth and flavorings are delicious :). but so it goes.
I've also stopped playing video games. Atleast until I crack. Although I do enjoy playing video games I never feel really good about doing it. After i'm done there's always a bitter taste in my mouth that I could have done something better with my time. The pleasure I get from it is very temporary and utterly useless :). I should try and encourage myself to seek pleasure from books, people, or practically anything else :). Everyonce in a while in my life I try and change my habits with the motivation of betting which is what this is. Sometimes it works, sometimes it doesn't. It's worth a shot though, isn't it.
I've been reading the dhammapada a lot lately. A lot of the actual text is just metaphors for people to get motivated to seek the spiritual but the commentary is excellent. I don't really want to identify myself as a buddhist. Atleast not until I really understand it and understand the other perspectives I have available to me. The general message is beautiful though. I would elaborate, but I don't feel like giving a sermon.

I been feeling very good the past few days. Good for really not too much of a reason at all. Although I get the sense that I've grasped onto the person that I was in highschool again rather than the person I was in Junior high, which seemed to be the order of the day for a while. I do believe it has a bit to do with the stress that I undergo but it could all be interrelated with lots of things so it's almost not worth worrying about. I have been trying to stop myself from overthinking and making situations more complex than they need be. Life is really such a simple thing when you think about it. Most of daily life is just fluff anyway :). Or so says the great and wise Andrew. Feel free to disagree, keeps life interesting.
I've been getting into psc like ridiculous. I'm almost excited to go and help. Everyone in it is quite cool though as well. I'm "helping" put together a discussion on tuesday in the ballroom lounge at 7 where people will be discussing differing liberal points of view. haha. We also have to help with the multicultural dinner etc. Should be good times. Although I just don't see PSC as a Multicultural Group as much as I do say Shakti or Kasa, but whatever. We'll read our poem and be done with it. Pete, Joe, and I are probably going to a potluck on saturday night with em. Should be good times. If you're super liberal, don't mind vegetarian, and want to go to PSC maybe you should come :). Although since I'm such a new member I don't want to take too many people :). Everyone is very stereotypically super liberal sooooo know what to expect. |

I drank the strongest coffee in the world last night. Almost by mistake. I just put way too many grounds in the filter. It was a lot like super coffee sludge that resulted in me being uncomfortably wired all night long with a terrible headache. Not the best idea. I should probably cut down.
Sometimes I like to think I exist outside of the effect of my emotions. That I will always be a rock, but I realize these days that I'm just as easily affected as any person. Which is terrible because it clouds my thinking and makes me act like an idiot/jerk. Whatever. I shouldn't have gotten myself so far behind in work.
I have to write two four page essays tonight. One of them is a freaking joke though. The other one isn't that difficult either so I'm not really worried. I almost miss the days of the park job when i would go and not think at all and then come home and not worry about much. I think I've been overthinking everything a lot lately too. Making complexities where there isn't any need. Stupid problems I have.
On a side note I reconnecting with all of my old webster friends via facebook. I haven't been stalked yet either. We shall see if the premonitions of inbal come true. If it does happen though I'll just take out most of my personal info and not check it. Until that time it's atleast an interesting waste of time.

| | A whole new world... you know the one from aladdin... shutup | ] | Well I'm at home with nothing to do so I thought I might as well update this... thing :)
I just watched eternal sunshine of a spotless which was awesome and I'm going to have to watch it several more times so I can catch and remember everything that goes on. I'm glad that Jim Kerry was finally able to break his pet detective persona well. Rather than the other attempts (cable guy, man on the moon etc) this one was really good.
I sought out the aladdin soundtrack for no real reason today... probably because I was extremely bored :). I used to love that movie so much in days gone by. I don't care what anyone says it's awesome. And I don't care if it leads to my sexuality being questioned. I'm secure :)
I slept for 15 total hours yesterday/today it's almost a record, but then again, it's not. Sleep is usually the best part of my day. When there's nothing to bother you until the time that you wake up. It's almost like the peace that comes during the time it takes to get from point A to point B. When everything that you've been able to do to get there on time has been done and you just start moving. This is of course short of breaking the law and speeding, running, and having a cell phone. At which point little piece is brought to you. Unless of course you... turn it off which unfortunately for others is always an option. I wonder though if people in ancient times found this peaceful or just terribly boring :), probably some of both.
i bought give up by the postal service today. I was in a tug between them, obstacle 1 interpol, and moon & antarctica by modest mouse. It being the first album I've spent money on in a good long while. I feel like I should actually support the bands by buying their cds now that I have the ability to do so. Which isn't a bad feeling I guess. I do the same thing with games that I want to support. It's worth the money.
Music is so much a larger part of my life nowadays. It's really quite amazing. For the first three quarters of my life or so I didn't have a single album and no mp3s on my computer. whatever music I heard was from my brothers room, at school, or on the radio. But not too often on the radio because I didn't really listen ever. And then for some reason I started listening again. First I listened to all of my brothers stuff and got on heavy metal, prog rock, early 90's alternative, and classical. Interestingly enough. But then I became a huge anime nerd, and with anime inevitably comes a love of anything and everything asian. Me and my japanophile ways downloaded huge amounts of j-pop/rock. Fortunately enough for myself in amongst my crappy j-pop downloads was all the normal good stuff from before and some of my first techno. I actually remember downloading sandstorm for the first time and thinking what an awesome track it was. This led me to move into my techno phase and this is how I've spent the majority of my time the past three years. Taking in techno of every type. I learned how to glow stick and it was good. But I think I'm moving onto something new now. By way of the radio folks and brendan's cd binder I've added huge amounts to my library. and I think, it's a good thing
just the normal evolution of a person I guess.
I'm behind on my school work. But I'm not really worried. Atleast not right now :)
well that's all I feel like writing now :) I hope everyone from geneseo is enjoying their break. Frankly I can't wait to get back, for I love it, and it loves me.
Last thought: Why the hell did I like jpop so much?

I have been extremely busy lately because of my procrastinating ways but that's to be expected. I kinda feel like I want to double major in psych again just because I like it so much but I should think about it. I don't want to go jumping into things. I fasted last friday for saturday for yom kippur for no good reason. It wasn't the best idea though because I was sick for a couple days as a result and descended into the worst mood i've been in for quite some time saturday night. Let alone the fact I was getting sick :).
I think I'm just gonna flow with life for a little while :). worrying doesn't get me anywhere but backwards. |

It's really just a neverending comedy hour around these parts with some reading mixed in somewhere in there. I love seeing everyone again. oh happy days.

I built my new computer and have been playing that a bunch. It is quite enjoyable. I've been reading the whole series of harry potter again and am blazing through it.
I hung out with my cousins lately, first with julie on her boyfriends boat which was good, and then danny and company later on in the day. Which was good. All around a good night which I am paying for now :).
On more interesting notes, I'm losing track of time. I can't remember what day it is or what I did yesterday or anything like that. i think it's a symptom of going to work everyday and doing the same thing over and over again. It's like "andrew what did you do at work today" "umm... I'm pretty sure I cleaned lodges, then I probably weedwacked, and had to pick up trash inbetween" so it goes. but whatever.
I've also been in a long period of blah following my trip down to long island. Twas great times to be sure. I want to get out of here though. But I'm not really excited about geneseo. It just seems like whatever. I'm going to get up one day and then do it and then I'll be there instead of here. Also I'm getting really tired of work. Not that it's a bad job but I've woken up early just about every day of the summer. I also haven't really been doing as much with friends but I don't feel terrible for not doing so. I'm in andrew introvert mode I guess :).
I'm also going pretty chaotic because of the whole colleen not getting too much better thing, and the need for me to move on, but the guilt related to moving on, and the job I have to not abandon her. A rampant shit storm I assure you.

| | THE ORGASMATRON! | ] | well I am now posting on my mothers computer because mine is absolutely fried :). In order that doom 3 work on my computer I found it necessary to fix one of the ram sticks that had for some reason stopped being registered by the ram slot on the motherboard. So I open the thing up and start playing with the ram. having turned off the computer of course. But while I'm fidgeting, with the ram stick half in and half out of the slot, the computer decides to turn on. I suddenly freak out and try and get the ram stick completely out. While I'm attempting to free it a spark flies off mother board to the ram slot. Frying my motherboard to shit. The whole thing went up in smoke. so I took everything apart. I'm hoping my video card is still ok. Along with my devices and the power supply. I already bought a new motherboard with a new athlon 64 3000 processor, a gig of kingston pc 3200 ram, a cd-rw/dvd drive, and a 80 gig harddrive for storage space. something to the ring of 500 it cost me. So hopefully another heap won't be dumped on me and the video card and other stuff still works. but whatever I was waiting to overhaul that computer anyway. so that's pretty much what's up for now. I got free two day shipping on the stuff so It'll come and I'll be figuring that out for a day or so. Should be good times. but after it's all in I should be able to make doom 3 my bitch, or atleast be able to run it... y'know, whichever. |

The car rides I have to say were some of the best. Having an absolute blast with neil and meg. Kris and jess were unfortunately outside of the loop for most of the trip :(. sadness. oh well. haha. so many inside jokes. I can't even begin.

wednesday night was not great being that I felt sick and don't remember much of it. a learning experience at best. :)
thursday night with feinsilver was excellent. He is so freaking tan. Not like the ghost he once was at geneseo. We had a good time trying to get meg and neil on a train to get to sayville in time for her sister's sweet sixteen party. drama drama. Luckily it turned out to not be so bad. So all was well in the end. Joe was going to a texas hold em tournament. I lost 10 bucks at poker faster than you can say "Andrew sucks at poker!" His friend were really good fun though.
Joe's mom was sooo nice. Holy crap. Can people be that nice!? haha. the next day I had the opportunity to wake up in his house alone. The whole family had gone out. A little awkward yes. but I fidgeted around surfing online, going through joe's diary, leafing through his personal effects, biding my time, ya'know whatever.
After a while his mom came home which was good because kristine called in quite a state having gone south instead of north off of the northern parkway exit. While I was talking on the phone and mentioned what street they were on Joe's mom exclaimed "whoa! they are lost!". haha. but eventually they found their way to joe's house and picked me up so we could all go to jones beach. woooo
Let me tell you. It was so much fun. :) The beach was so big. So very very big. It went on forever in either direction. The water was green with seaweed, but andrew fears not seaweed! and the waves were so big, SO big, some of them got to be 4-5 feet off the top of the water. once or twice while trying to ride them I wgot slammed into the sand leaving some scrapes, but it was still fun as hell. I was there with kris, jess, maggie, inbal, and joe, with meg, neil, and tina coming in later. I never did make a sandcastle I was spending all my time playing in the surf. The only time I spent out of the water was when I had to stop because I was exausted from the waves.
Also a quick shot at friendly's. I had a friend-zi (like frenzy but gutted out like a fish and turned into something friendly's could package) I mean it was good, but really, McFlurry is bad enough.
After that we all went to very expensive mexican at blue tequila. I ate three greasy enchiladas in mole sauce. Tina got a grass salad, neil got a cheese burger, and Meg got a huge bowl of guacamole. yea I know what you're thinking, bigger. :)
After dinner we went to joe's house sans meg, neil, and tina. we proceeded to play a drinking game called kings. This in the end resulted in me throwing up because I was already full and because of an unlucky streak was forced to drink a whole bunch of times in a row. This simply reinforced my rule to never play drinking games.
I felt better after though and had a good time of it. Played frisbee with the folks, walked around the neighborhood a bit, laid in grass, you know, pleasant things. Then I went to bed. Although joe has very chatty budgies. Very chatty. haha
after that we all piled into kris' car and hit the road. I was dropped off at inbal's while the rest proceeded to go into the city and get lost a lot. four times I believe. I nbal's house was good fun. Her family was extremely nice to me. Despite my mispronunciation of chummus.... but they all had a heartfelt laugh at my ignorance. :)
We then took a slightly reliable green van to randall's island for the super music fest known as curiosa :). I thought concerts were fun before but this one was an absolute blast. Going in I really only knew mogwai and the cure, but the other bands were soo good. The rapture, this kind of dance punk, was just awesome. Highlight of the rapture was the cowbell guy. He was like dancing around around smacking this cowbell. It was hilariously awesome. I could totally have a dance party with it. Unfortunately people at the concert were allergic to dancing. Or so it seemed. which was sad. But I guess to be expected.
Next up after the rapture was interpol which i'd only heard small amounts of before but were also really really good. The bassist was mad cool.
mogwai was pretty good but they are mostly ambient stuff. Muse was also really good, I thought, but I like that progressive rock sound most of the time.
Then the cure was great. But I was just so exausted from standing the encores were just a test of my endurance. By the end I was praying for the lights to come on :). haha. so much fun though. got to meet inbal's sister who was quite enjoyable decked out in her indie fashions :). Almost all of the people at the concert though were dressed in such awesome stuff. I met up with brendan who has a new scruffy beard/mustache ensemble. haha. After the lights finally turned on at 10:30, me with my terrible sense of direction, totally pointed our party in the wrong direction for our car. but it was really fun trying to find it, and looking at other people who were just as lost as us trying to find the same lot. Luckily we had gotten the lot that was farthest away from the concert and we got to walk a really long way to and from. Not that it was totally my fault. The concert had like no signs up pointing the crowd in the right direction so it ended up being a matter of the blind following the blind. they also had only like five workers out in the entire area directing people. Which was a huge area. Being a large part of randall's island.
after that I went back to inbal's and crashed out on the fold out couch. with my cellphone out of battery for the first time yet. neil left me three messages which got progessively more hilarious. ending with a quote from the swingers. But as I got up the next day kristine had figured everything out and everyone came to plainview, Kristine was only a little later because she got lost (surprise!), and then we all went out for breakfast at this nice diner. After which we all parted ways again and the roadtrip began back up to kristine's. This was of course almost a neverending torrent of hilarity mixed in with lots of close brushes with death. meg kept a tally, but let's just say it was a bundle :). Kept the trip interesting though. Then at around 10:20 or so I finally reached my house and then went to bed. Ending one of the greatest vacation I've ever taken.... ever.
who thought vacations could actually be relaxing. I always thought vacations inevitably let me down based on my high expectations. But this one was just thoroughly fun. thoroughly :). |

Wednesday: I leave work at 4:00 come home and clean up, then pack stuff in my little civic and pick up meg vacey and neil mclaughlin, drive down to pittsford via highway to pick up jess ackerman, then driving from there to west sand lake east of albany and chilling with kristine and friends for the night which will mean that I will be partying hearty. and so ends wednesday
Thursday: I wake up at 11:45 then mosy into the car with four other wonderful people for the two hour and fifty-nine minute trip to greatneck long island. there neil, meg, and I are being dropped off at the beautiful mr. feinsilver's house for good times aplenty. Neil and meg will be picked up by tina around 6 or so and go from there to sayville. I am going to stay the night and you can be sure, party hearty. so ends thursday
Friday: wake up in a stupor and go to the robert moses/jones beach (to be figured out while we're there with much debate). hang out at the beach for all of the day. This will be done with kris, jess, mags, inbal, megan, me, joe F, joe M, jordan, hopefully james, neil, tina, and meg will also make it. Alive. :) from there a whole bunch of us are taking a train into New York and then going clubbing. Better be a good dj cause I'm bringing glow sticks. :) that night I will be situated on the dance floor, you can be sure, partying hearty. from there we slink back to maggie's apartment and crash on the floor. :) So ends friday Saturday. after waking up late I am going by train then ferry with inbal and her sister to go to curiosa. This might be after meandering in the city a tad :). or whatever. curiosa will last into the night with me chilling with mogwai. (this is all assuming i get the god damn tickets :) ). this night I will spend at inbal's house. Not quite as hard partying as nights past but you can be sure, at curiosa, I will be partying hearty :). So ends saturday
Sunday: question mark... haha I'm not sure what the hell I'm doing this day other than going home. Although I'm open to suggestions. I'm assuming tina drops off neil and meg in a convenient location and kris gathers us all up again for the road trip home :). Sunday ends with me in my bed with work the next day to look forward too. :)
after I finish work on wednesday I will have worked two weeks straight with absolutely no breaks. 96 hours that is. I get four hours every weekend day though so not all 8 hour. Still pretty sucky.
had a hang out session with dan and steve lately which was pretty awesome. My dad's been keeping me busy otherwise. That is when I'm not totally burned out from my job. we got a community service guy at work. he's not so bad. Reed is still keeping me busy. Although he is giving almost 150$ worth of "chocolate" for 25$. Gotta love bargaining skills.
